Asparagus Recipes for Springtime

Spring is here and it’s the time to enjoy tender stalks of asparagus. This versatile vegetable is easy to cook and is full of nutrition and taste. It is especially suitable for cook-outs especially if you are enjoying nature in your cabin. And if you have a flat screen and are watching a Transformers, Horrible Bosses, or Fast and Furious movie, who says you cannot enjoy that delicious asparagus meal even more!

Asparagus is easy and quick to cook and does not require fancy cookwares, making this vegetable an ideal choice for picnic lunches in your log cabin. As a part of our cooking series, celebrating the fresh and natural attributes of vegetables, here are some of our recipes to let you savor the delicious goodness of asparagus.

Creamy Asparagus Soup

1 lb. asparagus
1 cup chicken or vegetable broth
½ cup heavy cream
1 tbsp. butter (unsalted)
1 clove garlic, minced
Salt, black pepper
Chives and dill
Cut asparagus into small 1 inch pieces. Melt butter in a heavy pan over medium flame.
Sauté garlic, until fragrant. Add salt, black pepper as per your taste.
Add asparagus and cook for about 5 minutes or until golden brown.
Add broth and cover the pot. Let it simmer for 10 to 15 minutes.
Get the pot off the flame. Make sure that asparagus is green yet tender.
Use blender to puree the mix. Put the puree back to pot and add ½ of the cream. Simmer on low flame for a little.
Garnish with chives, dill, and remaining cream. Enjoy.

Baked Asparagus with Cheese

1 lb. Asparagus
½ cup heavy cream
1/2 cup fresh parmesan
1/2 cup mozzarella
2 cloves garlic
Salt and black pepper
Preheat oven to 400 degrees.
Trim Asparagus and grate parmesan cheese.
Shred mozzarella.
Arrange asparagus in a baking dish.
Pour heavy cream and drizzle garlic and seasonings.
Cover the arrangement with Parmesan and mozzarella.
Place the dish in the oven and bake for 25 to 30 minutes.
Make sure that the cheese is golden. Serve it hot and simmering.
Asparagus with Bacon and Brie
1 lb. asparagus
6 slices bacon
3 oz. brie
8 oz. pie crust dough
Lemon, salt, black pepper
Destalk asparagus and preheat oven to 375 degrees.
In the meantime, heat a thick skillet and cook bacon for about 10 minutes.
Once the bacon is cooked, drain it on a plate.
Add asparagus to skillet and cook until it is lightly tender.
Season with salt and pepper. Divide brie into small 2” wide squares.
Take pie crust dough and roll it. Cut it into small squares as per your requirements.
Take a muffin tin and line with pie crust dough.
Fill the cup with bacon, asparagus and brie.
Bake for about 15 minutes or until golden. Serve piping hot.

Creamy Asparagus Risotto

1 lb. asparagus
1 large onion
1 packet mixed vegetables
1 cup rice
4 cups your choice of broth
½ cup dry white wine
Salt and spice of your choice
Put a big pot over medium heat and cook onion until golden and soft.
Add garlic, cook for one minute.
Combine with rice and add a cup of broth. Lower the flame and cook, stirring occasionally.
Once the broth is evaporated add wine.
Keep cooking and adding a cup of broth until rice is tender and creamy.
It should take about 30 minutes. Add asparagus and vegetables. Cook until soft.
Season well with salt, spices and herbs of your choice and enjoy the natural goodness of asparagus.
